Small white fondant flowers and mint green leaves, brushed with  super pearl dust. Divided into 2″ squares for easy serving. Pan size 12 x 18

CHUNKY APPLE CAKE

Since we are getting into the Fall months that means apples, lots of beautiful Fall apples. This recipe is one of my favorites.

Apple Cake

1/2 cup melted butter

2 cups sugar

2 large eggs

1 teaspoon vanilla extract

2 cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

2 teaspoons cinnamon

4 Granny Smith apples, peeled and sliced

1 cup chopped walnuts (or pecans)

Stir together butter, sugar, eggs and vanilla until blended.

Sift together flour, baking soda, salt  and cinnamon, add to butter mixture, stirring until blended. Stir in apple slices and 1 cup walnuts (or pecans).

Spread into 9 x 13 greased pan

Bake 350 for about 40 to 45 minutes.

Cake is delicious plain or spread with your favorite cream cheese icing.

 

 

 

 

 

 

Christmas morning coffee cake

I know it’s not Christmas yet but I came across this recipe and thought I would post it anyway. Don’t have to wait for a special occasion to enjoy this…

   COFFEE CAKE

2 ripe bananas-peeled and pureed in blender

2 cup baking biscuit mix (buttermilk)

2 Tbsp sugar

1/2 tsp cinnamon

1/4 tsp allspice

1 egg

1 tsp vanilla extract

1 cup whole berry cranberry sauce

Topping (recipe follows)

Combine baking mix, sugar, cinnamon, allspice. Beat in pureed bananas, egg, & vanilla. Pour into greased 9″ square pan. Break up cranberry sauce. Spoon evenly over batter, Sprinkle with topping recipe.

Bake 400 for 25 minutes or until cake test done.

TOPPING:

1/2 cup brown sugar

1/2 cup pecans (chopped)

2 Tbsp melted butter

2 Tbsp granulated sugar

Combine together & sprinkle over batter before baking.

Serve warm and enjoy…
