Almost Halloween Birthday

I have done so many Halloween birthday cakes for Joe I am at a lost for new ideas. Each year I try to do a different design not only for him but for myself as well since it’s the decorating I really enjoy and not the baking. The cake is always the same, yellow butter cake with raspberry butter cream filling and almond butter cream frosting. I thought the ghost & pumpkin borders were cute but the guy in the middle I’m not so sure of.


Fresh Berries Wedding Cake

Piled high with fresh strawberries and blue berries, this cake was a feast for the eye as well as the palette.  Decorated with 3 different designs on each tier, dots, scrolls and basketweave.

A Flower Basket

 Sometimes a sheet cakes can be soooo boring but I love how this one turned out. I piped the basket using a small tip # 47, the flowers are all butter cream. Instead of placing the flowers here and there I grouped them by color in clusters, giving a more realistic look to the basket.

Baby Christenings

  Here are 2 examples of Christening cakes. The first one has a piped cross filled in with a cornelli lace design and a spray of butter cream flowers and a monogram made of fondant.

The second cake design was similier with the cross molded of white chocolate, accented with white butter cream roses and touches of blue flowers made of fondant. Both cakes were classic butter cakes frosted with vanilla butter cream. 




Halloween Birthdays

Don’t you just love Halloween birthdays or at least near Halloween.  There are so many possibilities for cake decorations, you can go as crazy as your imagination will let you. I have one customer that loves for his birthday cake to be decorated with this theme. Here are 2 that I have done for him in the past, now I’ve got to start thinking about this year.

Fruit Roll

With Christmas not to far away I have been thinking about all the baked goods I give away as gifts, so I have been going thought my collection of items I do each year and ran across this one and thought I would share it. It is so easy and requires no cooking and can be prepared ahead.

Fruit Roll

1- 12oz. Box Vanilla Wafers-crushed

1 cup chopped candied pineapple

1 cup chopped candied cherries

2 cups chopped pecans or walnuts

1- 14oz. can condensed milk

    and sifted powdered sugar to roll in.

Combine 1st 5 ingredients, Mix well. Divide mixture into 3 equal portions. Roll each portion into a 11 inch log, roll each log in powdered sugar and wrap in plastic wrap. Chill til firm. Cut into 1/2 inch slices.

Make about 5 doz.

Mrs. Jones Pound Cake

When I went searching for a special recipe to share I came across this one, It came from a lovely woman that has now passed away.  When I started baking and decorating cakes I always said that I would not make it a habit of decorating other peoples baked cakes but when Mrs. Jones came to me with her request I couldn’t turn her down.  You see this was the only cake her elderly Mother would eat.  So each year on her Mother’s birthday she would bring me her baked cake to be decorated. Later on after her Mother had passed away and she herself was getting older and didn’t bake  anymore she shared her recipe with me. Now I can share it with you. 


3 cups sugar

1 cup butter

1/2 cup Crisco

3 cups sifted plain flour

6 large eggs

1 cup milk

1 teaspoon vanilla

1/2 teaspoon lemon extract

    Cream butter, crisco, & sugar -beat well, add eggs one at a time and beat. Add flour alternatly with milk. Do not over beat. Stir in flavorings

    Bake 350 in greased 10′ tube pan 1 HR & 15 Min.

Here is another very good cake for fall. Of course you can make it anytime but it justs seems to be perfect for the fall season. I love it with a cream cheese frosting or a lemon buttercream.


3/4 cups crisco shortening
1 cup sugar
3/4 cup packed brown sugar
3 eggs
2 1/4 cups all purpose flour
1 teaspoon baking powder
 3/4 teas. baking soda
 1/2 teas. salt
3/4 teas. cinnamon & cloves
1 cup Buttermilk
1 teas. vanilla

Cream shortening, gradually add sugars & beat well. Add eggs and beat. Combine flour & other dry ingredients [spices etc] add to creamed mixture alternatly with B-milk   Mix well Do not over beat
  Bake 350 about 30 min. [8 or 9 in.greased & floured pans]

Orange Kiss-Me Cake

This was one of the first cakes I learned to bake. It came out of a very old cook book. It was a “one bowl cake”. I hope you enjoy it as much as I have.


1 large orange
1 cup seedless raisins
1/3 cup walnuts
2 cups sifted plain flour
1 teaspoon baking soda
1 teaspoon salt
1 cup sugar
1/2 cup vegetable shortening
3/4 cup milk
2 eggs, unbeaten
1/4 cup milk

    Grind together pulp and rind of orange (reserve juice for topping), raisins, and walnuts, using food chopper.
     Sift together flour, soda, salt and sugar. Add shortening and 3/4 cup milk.
Blend at low speed, then beat at medium speed for 1/&1/2 min.
      Add eggs and 1/4 cup milk. Beat for 1&1/2 min.
Fold orange-raisin mixture into batter.
       Pour into 9x13x2-inch pan, well greased and floured.
       Bake 350 40 to 50 min.
NOTE: Can be baked in 8″or 9″ round pans at 350 35 to 40 min

    Orange-Nut Topping
      1/3 cup orange juice
      1/3 cup sugar
      1 teaspoon cinnamon
      1/4 cup chopped walnuts
Drip orange juice over warm cake. Combine sugar, cinnamon,
      and walnuts; sprinkle over cake.
